Andrew, I finally got around to trying these and they are so good I’m going to start baking them for my Farmer’s Market customers. I love that they are also suitable for low carb/paleo diets. My customers are always looking for healthier options. Now they will be able to enjoy all the farmer’s market hummus, garlic sauces, etc. with some pita! Thank you for sharing this recipe!

Hi Andrew — Love this recipe, but me and many of my readers can’t eat eggs. Have you tried this recipe with egg replacer or do you think it is feasible to use it? Do you have any other suggestions?

    Thanks,
    Sandy

I just love these pitas! Besides being GF (9 yrs.), I started eating low carb last year because corn & rice had been bothering me. These are great, it is nice to have a “bread” treat. I will be making these a lot!

    Thanks for the recipe:)

    Glad you like them!

@Sandy I often use flax meal as replacement for eggs without any trouble in recipes. Just mix with water as per directions and it is a perfect substitute!
@Andrew, my GF 5 year old is singing your praises-she has missed pita so and most recipes I have seen are just loaded with junk so I won’t make them! These she can have as often as she would like!
    Thanks!!

I made these and my hubby and I love them. I have to be GF but he doesn’t but 98% of what he does eat is GF but the one thing he just can’t give up is his bread. But with how easy this pita bread is to make and HOW GOOD it is to eat he has cut back on the gluten bread. Thank you so much for all the info you put out there. You have been a great help to my family :)
